If you’re wondering what to do with all those pumpkins you have decorating your home. There’s nothing like a hearty pumpkin soup to warm your insides! Of course if you don’t have any pumpkins you still can enjoy this delicious soup with canned puree. If you try it, please share your comments and photos below. Enjoy!

1 TBSP Butter
1 Cup Onion, chopped
1 TBSP flour
1 clove garlic, minced
1 tsp curry powder
1/4 tsp cumin
1/4  tsp nutmeg
1 can, 14 ounces of sweet potato fresh cubed or canned
2 cans, 14 ounce each of  pumpkin puree*
2 cups chicken broth
1 cup  fat free milk
1 TBSP fresh squeezed lime juice
chives for garnish

In a large stock pot melt butter over medium heat for one minute. Add chopped onion saute for 5 minutes until translucent, add flour, stir. After 1 minute add garlic, curry powder, cumin, sweet potatoes, pumpkin puree and chicken broth. Bring to a boil then reduce heat and simmer for 30 minutes partially covered, stirring occasionally.

After 30 minutes, turn off heat.  Cool for 10 minutes. In batches add mixture to a blender and puree until smooth. Return batches of smooth puree to stock pot. Add while stirring 1 cup milk. Heat to medium heat, DO NOT BOIL, heat only 6 minutes, turn off heat. Then squeeze in lime juice and stir.

Serve in bowls, garnish with chives. Serves 4-6.

 

*If using a real pumpkin, cut pumpkin in 1/2, remove seeds and strings, and place cut side down in baking pan and cover with aluminum foil. Bake at 350 for about 45 minutes. Then puree.
